Our menus are a creative co-collaboration with our clients, local farmers, producers & suppliers. You can always count on us for innovative & interesting flavors, healthy ingredients, local and seasonal selections and a loving presentation!

LUNCH — always includes cookies and fruit.
- Soup and Sandwich bar with quality cold cuts, cheeses, tuna, tofu spread, garnishes, pickles, assorted breads and crackers.
- Make-your-own Burrito/fajita Bar, with black beans, cheeses, ground beef or turkey, sour cream, peppers, olives, onion, lettuce, chips and fresh salsa.
- Pita Pocket bread sandwich bar with diced chicken, huumus, tabbouleh, onions, yogurt, cucumber and tomato salads, and a lentil soup.
- Pasta Bar, with marinara or mushroom sauce, pesto, pinenuts, cheeses, and Romaine salad with olives, feta & Italian dressing.
- Shepherd’s Pot Pie; hearty vegetable & chicken or beef under a flaky crust; butter lettuce salad.
- Minestrone soup, salad and sandwich bar.
- Pizzas according to the cooks’ inspiration, including roasted vegetables, cheeses, pepperoni or salamis, mushrooms, etc. with Romaine salad.
- Quiches, of various types including broccoli, ham and cheese, mushrooms, leeks and ham, gruyere, or to your taste.
- Black Ben Chili, vegetarian or with meat, homemade cornbread, and coleslaw.
DINNER — includes fresh vegetable, salads, and homemade bread.
- Grilled marinated chicken with olives and peppers, polenta and corn on the cob.
- Our nearly-famous Lasagne, roasted zucchinis, salad and garlic bread.
- Barbecued Tri-tip or veggie burgers, baked potatoes, broccoli, garlic bread
- Smoked, local sausages, from ROUND MAN SMOKEHOUSE, with Cannelini Beans, butter lettuce salad, and seasonal vegetable. Garden burgers and chicken sausages also available for non pork eaters.
- Barbecued pork loin with garlic and herbs, or our spicy plum barbecue sauce.
- Mixed GRILL of Tri-tip, free range chicken, and sausages

DRINKS
We provide bulk fruit juices, ice tea, water and milk at each meal, with a coffee and tea station at all times. You are welcome to bring your own Sodas, bottled waters, and alcohol, or we can supply them on a “cost-plus 15%” basis.
VEGETARIANS
We provide an alternative at each dinner, and choices at breakfast and lunch.
VEGANS and GLUTEN FREE
An alternative can be arranged for a small surcharge, to cover the extra costs involved. If the whole group is vegetarian/vegan, this wouldn’t apply.
SPECIAL FOOD NEEDS
If your diet is very special, we encourage you to bring your own food, and we will assist you as needed.
ORGANIC FOODS
Where budget permits we buy organic, and for a supplement we can buy all-organic produce, dairy and meats. We try to avoid highly processed pork products, but we can provide this if your group wants them.
CAVEAT
We tend to improvise a great deal, and your flexibility about this has allowed us to do some of our best food as unexpected ingredients become available, or predicted ones do not.
PRICING
In general, the longer the stay and the larger the group, the less expensive per person per day, as basic costs are absorbed, and food is more efficiently bought and used.

Appetizer:
Crudite / Fromage / Charcuterie
A selection of the finest meats, cheeses, and seasonal vegetables, that this area has to offer. Including offerings from Humboldt Fog, Roundman’s Smokehouse, Nye Ranch, and Elk Creamery. We shop the farmers market and local organic farms. Arranged in a generous display that will attract even the most discerning pallets.
Starter:
Shrimp and Crab Bisque (seasonal)
A savory slow cooked soup using local Dungeness crab and stock made from crab and shrimp shells. The addition of saffron, tomato, cream and butter, make this seasonal treat impossible to resist. Garnished with creme fraise and green onion, and served with our fresh homemade french bread. Featuring SUPERB SEAFOOD seasoning from our exclusive line of Herb Blends.
Salad:
Organic baby greens tossed in a lightly reduced balsamic vinaigrette topped with ripe plum tomatoes, red onion, pickled beets, sliced pear, candied walnuts and Humboldt Fog.
Entree:
SALMON Provençal (seasonal)
Fresh Local wild caught Pacific Salmon Pan Roasted and served with a bright and colorful Provençal sauce (butter, lemon juice, diced tomato, shallots, capers, olive oil). Served with creamy red russet potatoes and fresh herbs, roast seasonal veggies, and our fresh homemade bread. Featuring Herbes de Provence seasoning from our exclusive line of Herb Blends.

Grilled Rack of Lamb
Grass Fed New Zealand Lamb dry aged for 48 hrs. after being rubbed in our house made Herbes de Provence. We then grill it to perfection over a real wood fire. Served with our specialty polenta seasoned with local wild mushrooms and Gruyere cheese. Roasted Brussels or Broccolini. Top it all off with a reduction sauce made from the lamb drippings, local wild mushrooms and pinot noir. Featuring Herbes de Provence and Intensely Italian seasoning from our exclusive line of Herb Blends.

BBQ TRI-TIP
Santa Maria style, dry rubbed and grilled to perfection, grilled seasonal veggies, served with sweet beans or garlic mashed potatoes, mixed green salad, and fresh homemade bread. Featuring Intensely Italian seasoning from our proprietary line of herb blends!
SALMON
Provençal Pan Roasted with diced tomato, shallots, capers, lemon juice, and olive oil. Served with creamy red russet potatoes and herbs, seasonal veggies, mixed green salad, and fresh homemade bread. Featuring Superb Seafood seasoning from our proprietary line of herb blends!
SMOKED ALBACORE
We use fresh, local, wild caught albacore straight from the fishery. We then butterfly it open and stuff it with creamed leeks herbs and sun dried red bell peppers. It is then hot smoked with apple wood and served over jasmine rice with fresh seasonal veggies in a lemon-butter sauce.
NONA’S LASAGNA
Our nearly famous recipe combines the essential blend of roasted onions, carrots, garlic, tomato sauce, seasoning, ground beef and pork. We first slow cook our sauce and then combine it with pasta layered with ricotta and mozzarella, and topped with Parmesan cheese. Served with fresh mixed green salad and garlic bread. Featuring Intensely Italian seasoning from our proprietary line of herb blends!

PORK RIBS
Slow Cooked Country Style Pork Ribs, in a Good Thyme BBQ sauce. Inspired by the flavors of the Yucatan, our secret sauce uses some chipotle peppers and Pineapple Juice, but don’t tell anyone. We serve them with sweet beans or creamy mashed potatoes, seasonal roast veggies, mixed green salad, and fresh homemade bread. Featuring Beautiful Beans or Perfect Potatoes seasoning from our proprietary line of herb blends!
POZOLE
We are known for this Mexican specialty, it is delicious! A hearty slow simmered stew which is traditionally made with pork but chicken works great, with vegetables and hominy. Vegetarian version includes butternut squash and walnuts. Corn or flour tortillas. Traditional garnish of shredded onion, cabbage and radish. Salad of fresh greens and cabbage slaw. Featuring Beautiful Beans seasoning from our proprietary line of herb blends!
CHICKEN BREAST
Roast Chicken Breast in a maple-mustard mushroom sauce, herbed cheesy polenta, and brussels sprouts or broccoli. Mixed Green Salad and fresh homemade bread. Featuring Terrific Turkey seasoning from our proprietary line of herb blends!
CHICKEN ENCHILADA VERDE
the perfect blend of roasted peppers, corn, onion, carrots, chicken and beans. with lots of cheese and sauce, served with spanish rice, sour cream, chips and salsa, green onions, and mixed green salad. Featuring Beautiful Beans seasoning from our proprietary line of herb blends!

FISH CHOWDER
Fish Chowder of local wild-caught fish with bay shrimp, choose between two options: Bouillabaisse-style with tomato, garlic, potatoes and Herbes de Provence or Thai style with ginger, curry and coconut milk, vegetables and rice.
